Bananarama Buckwheat Pancakes
Servings: 2-3
Ingredients:
2 Ripe Bananas
2 Eggs (pasture-raised will be the most nutrient-dense)
1 Tbsp Flaxseed
1/4 Cup Buckwheat Flour
1 tsp Baking Powder
Splash of Milk (to thin out batter)
Cooking Oil (ie., Ghee)
Optional Toppings:
Maple Syrup/Honey
Peanut Butter
Chocolate Chips
Walnuts
Fresh Banana slices
Instructions:
Prepare the Pancake Batter:
Place 2 ripe bananas, 2 eggs, 1 Tbsp flaxseed, 1/4 cup buckwheat flour, 1 tsp baking powder, and a splash of almond milk into a blender.
Blend Until Smooth:
Blend all the ingredients together until you have a smooth pancake batter.
Cook the Pancakes:
Heat a pan over medium heat, and grease with cooking oil/ghee.
Pour small amounts of the pancake batter onto the hot, greased pan to form pancakes. Use a ladle or dry 1/2 cup measure to make even-sized pancakes.
Cook the pancakes until bubbles form on the surface, which usually takes a couple of minutes, and then flip to cook for about another minute.
Stack and Garnish:
Stack the cooked pancakes high on a plate.
To serve, drizzle with your choice of toppings, such as peanut butter, chocolate chips, walnuts, fresh banana slices, and maple syrup or honey.
Serve hot and enjoy!
