Bananarama Buckwheat Pancakes


Servings: 2-3

Ingredients:

  • 2 Ripe Bananas

  • 2 Eggs (pasture-raised will be the most nutrient-dense)

  • 1 Tbsp Flaxseed

  • 1/4 Cup Buckwheat Flour

  • 1 tsp Baking Powder

  • Splash of Milk (to thin out batter)

  • Cooking Oil (ie., Ghee)

Optional Toppings:

  • Maple Syrup/Honey

  • Peanut Butter

  • Chocolate Chips

  • Walnuts

  • Fresh Banana slices

Instructions:

  1. Prepare the Pancake Batter:

    • Place 2 ripe bananas, 2 eggs, 1 Tbsp flaxseed, 1/4 cup buckwheat flour, 1 tsp baking powder, and a splash of almond milk into a blender.

  2. Blend Until Smooth:

    • Blend all the ingredients together until you have a smooth pancake batter.

  3. Cook the Pancakes:

    • Heat a pan over medium heat, and grease with cooking oil/ghee.

    • Pour small amounts of the pancake batter onto the hot, greased pan to form pancakes. Use a ladle or dry 1/2 cup measure to make even-sized pancakes.

    • Cook the pancakes until bubbles form on the surface, which usually takes a couple of minutes, and then flip to cook for about another minute.

  4. Stack and Garnish:

    • Stack the cooked pancakes high on a plate.

    • To serve, drizzle with your choice of toppings, such as peanut butter, chocolate chips, walnuts, fresh banana slices, and maple syrup or honey.

    • Serve hot and enjoy!
