Ground Turkey Enchiladas


Servings: 2-4

Ingredients:

For the Enchiladas:

  • 8 White Corn Tortillas

  • 2 Cups Mexican Blend Cheese, shredded

  • 1 lb. Ground Turkey

  • Taco Seasoning (I use the “Siete Foods” brand), to taste

  • Enchilada Sauce (I use the “Gran Luchito Red Sauce”)

  • Salt, to taste

  • Garlic powder, to taste

  • Chili powder, to taste

  • Cumin, to taste

  • 1/2 Cup White Onion, finely chopped

  • Cilantro (optional, for garnish)

  • Lime (optional, for garnish)

  • Sour Cream (optional, for garnish)

For the Seasoned Black Beans:

  • 1 Can Black Beans, rinsed and drained

  • Water or Cooking Oil (as needed)

  • Garlic powder, to taste

  • Onion powder, to taste

  • Chili powder, to taste

  • Cumin, to taste

  • Salt, to taste

Instructions:

1. Prepare the Seasoned Black Beans:

  • Rinse and drain the black beans.

  • In a pot over medium heat, add the black beans and a small amount of water or cooking oil.

  • Mash the beans to achieve a "refried bean" consistency.

  • Season the mashed beans to taste with garlic powder, onion powder, chili powder, cumin, and salt.

  • Remove the beans from the heat and set them aside.

2. Cook and Season the Ground Turkey:

  • In a skillet, cook the ground turkey over medium-high heat until fully cooked.

  • Season the cooked turkey with salt and taco seasoning to taste. Set aside.

3. Warm the Tortillas:

  • In a pan, warm the white corn tortillas until they become soft and malleable. Keep them warm by placing them in a clean, folded kitchen towel.

4. Assemble the Enchiladas:

  • Preheat your oven to 350 degrees Fahrenheit.

  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.

  • Take a tortilla and fill it in the following order: black beans, ground turkey, cheese.

  • Roll up the tortilla and place it in the baking dish.

  • Repeat the process with the remaining tortillas, creating two layers if necessary.

5. Bake the Enchiladas:

  • Pour enchilada sauce over the rolled tortillas in the baking dish.

  • Sprinkle cheese over the top.

  • Bake in the preheated oven for 20-30 minutes or until the enchiladas are heated through and the cheese is melted and bubbly.

6. Garnish and Serve:

  • Garnish the enchiladas with fresh cilantro, lime juice, and sour cream, if desired.

  • Serve hot and enjoy!
