Sticky Rice

Ingredients:
1 Cup White Rice (jasmine, basmati, or sushi rice)
2 Cups Water
3 Tbsp Rice Vinegar
2 tsp Sugar (coconut sugar works well)
1 tsp Salt
Instructions:
1. Prepare the Rice:
Rinse the white rice in a fine mesh strainer until the water runs clear. Drain it well.
2. Cook the Rice:
In a pot, combine the rinsed rice with 2 cups of water.
Place the pot over medium-high heat with the lid on.
Bring the rice to a boil, then reduce the heat to low and simmer until all the water has been absorbed, and the rice stops steaming as much (approximately 15 minutes).
3. Make the Sushi Vinegar:
While the rice is cooking, prepare the sushi vinegar. In a ramekin, combine 3 tablespoons of rice vinegar, 2 teaspoons of sugar (coconut sugar is a great choice), and 1 teaspoon of salt. Mix until all the ingredients are well blended.
4. Season the Rice:
Once the rice is cooked, transfer it to a mixing bowl.
Pour the sushi vinegar mixture over the hot rice.
Gently fold the vinegar into the rice using a rice paddle or spatula. Be careful not to mash the rice; your goal is to combine the vinegar evenly without crushing the grains.
5. Allow to Cool:
After incorporating the vinegar, set the rice aside to cool. As it cools, it will become sticky and suitable for various dishes. Enjoy!
