Sunny-Side Up Avo Toast

Ingredients:
2 slices of Sprouted Grain Bread (I use “Ezekiel Bread”)
1 Avocado
2 Eggs (pasture-raised is best!)
Sriracha (optional, for garnish)
Everything but the Bagel Seasoning
Instructions:
Toast the Bread:
Place the two slices of Ezekiel sprouted grain bread in a toaster or toaster oven.
Toast the bread until it reaches your desired level of crispiness.
Prepare the Avocado:
Cut the avocado in half and remove the pit.
Scoop out the avocado flesh into a bowl.
Mash the avocado with a fork until it reaches your preferred consistency. You can add a pinch of salt and pepper for seasoning.
Cook the Eggs:
In a non-stick skillet, heat a small amount of cooking oil/ghee over LOW heat.
Crack the two eggs into the skillet.
Cook the eggs sunny-side up, which means cooking them until the egg whites are set, but the yolks remain runny. You can cover the skillet with a lid to help cook the tops of the eggs (the trick here is LOW and SLOW - be patient. It’s worth it for the perfect sunny-side up egg. I PROMISE).
Assemble the Avocado Toast:
Spread the mashed avocado evenly onto the toasted Ezekiel bread slices.
Add Sunny-Side Up Eggs:
Carefully place one sunny-side up egg on top of each slice of avocado-covered toast.
Drizzle with Sriracha:
Drizzle Sriracha sauce over the sunny-side up eggs to your desired level of spiciness.
Sprinkle with Everything but the Bagel Seasoning:
Sprinkle Everything but the Bagel Seasoning over the entire avocado toast for added flavor.
Serve warm and enjoy!
