Thai-Inspired Peanut Stir Fry with Tofu (V)

Ingredients:
For the Stir Fry:
1 Medium Head of Broccoli, separated into bite-sized pieces
1/4-1/2 Head of Red Cabbage, chopped
1 White Onion, chopped
1 Block Extra Firm Tofu, sliced into 1-inch cubes
2 Cloves Garlic, minced
1 Tbsp Sesame Oil
For the Peanut Sauce:
3 Tbsp Peanut Butter
3-4 tsp Sriracha (adjust to your desired level of spiciness)
2 Cloves Garlic, minced
2-3 Tbsp GF Tamari/Reduced Sodium Soy Sauce (adjust to taste)
Water, as needed (to thin out the sauce)
Instructions:
1. Prepare the Stir Fry:
Begin by chopping the broccoli, red cabbage, onion, and mincing garlic. Set aside.
Drain the extra firm tofu and press it to remove excess water. I sprinkle salt on it to help draw out even more water. Cut the tofu into 1-inch cubes.
Heat a non-stick pan or wok over medium-high heat and add a small amount of cooking oil.
Stir-fry the chopped veggies in the hot pan until they become soft and slightly tender.
Add the minced garlic and drizzle some sesame oil over the vegetables. Continue to stir-fry for an additional minute or until fragrant.
2. Cook the Tofu:
In a separate non-stick pan, add a bit more oil if needed.
Place the tofu cubes in the pan and fry them on both sides until they are crispy and golden brown. Set aside once done.
3. Prepare the Peanut Sauce:
In a saucepan over low to medium heat, melt three large tablespoons of peanut butter.
Add approximately 3-4 teaspoons of sriracha (adjust to taste), GF Tamari or soy sauce, and about 2 cloves of minced garlic.
Thin out the sauce with water to achieve your desired texture, similar to the consistency of unset custard.
4. Combine all Elements:
Combine the stir-fried veggies, crispy tofu, and peanut sauce in the pan.
Stir everything together until the sauce coats the tofu and vegetables evenly.
5. Adjust Seasonings and Serve:
Taste and adjust the seasonings as needed. You can add more soy sauce, sriracha, or garlic to suit your preferences.
Transfer the stir fry to serving plates or bowls. You can garnish it with crushed peanuts!
