Tuna Melt Pepper Poppers

Ingredients:

  • 4-6 Mini Bell Peppers

  • 1 Can Safe Catch Tuna

  • 2 Tbsp Greek Yogurt

  • Garlic Powder, to taste

  • Salt, to taste

  • Shredded Cheese, for topping

Instructions:

1. Prepare the Mini Bell Peppers:

  • Slice the mini bell peppers into halves and carefully remove the seeds.

2. Prepare the Tuna Filling:

  • In a mixing bowl, combine the Safe Catch Tuna with Greek yogurt. Adjust the amount of Greek yogurt to achieve your desired consistency.

  • Sprinkle in garlic and salt to taste. Mix thoroughly to incorporate the flavors.

3. Fill the Pepper Halves:

  • Take the prepared bell pepper halves and spoon the tuna mixture into each one, distributing it evenly among the peppers.

4. Top with Shredded Cheese:

  • Sprinkle shredded cheese on top of each filled pepper.

5. Bake:

  • Preheat your oven to 350°F (175°C).

  • Place the stuffed bell pepper halves on a baking sheet or in an oven-safe dish.

  • Bake in the preheated oven until the cheese is melted and the peppers have softened slightly. This should take approximately 15-20 minutes, but you can adjust the cooking time to your preferred level of pepper doneness.

6. Serve:

  • Once the Tuna Melt Pepper Poppers are cooked to perfection, remove them from the oven.

  • Plate them on their own as a tasty appetizer or serve them with a side dish of your choice. I paired this with a side of millet with butter, salt, and thyme.

  • Serve hot and enjoy!
