Starry Night Stir Fried Rice


Servings: 2

Ingredients:

  • 1 Cup Black Rice

  • 3 small Bell Peppers (orange, yellow, and red)

  • 1 Cup Cherry Tomatoes

  • 1/2 White Onion

  • 1 Tbsp Butter

  • 4-6 Strips Bacon (nitrate/nitrite-free)

  • Salt and Pepper, to taste

Instructions:

1. Prepare the Black Rice:

  • Cook the black rice following the instructions on the packaging. Set aside once cooked.

2. Cook the Bacon:

  • Roughly chop the nitrate/nitrite-free bacon.

  • In a large skillet or wok, cook the chopped bacon over medium heat until it reaches your desired level of crispiness.

  • Remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain any excess fat.

3. Prepare the Vegetables:

  • If there is an excessive amount of bacon fat in the skillet, pour out some, leaving a thin layer.

  • Slice the bell peppers (orange, yellow, and red) into thin strips.

  • Slice the cherry tomatoes in half.

  • Slice the white onion into strips

4. Sauté the Vegetables:

  • In the same skillet with the bacon fat, sauté the sliced bell peppers, cherry tomatoes, and diced white onion over medium-high heat.

  • Stir-fry the vegetables until they become slightly tender, about 4-5 minutes. Adjust the cooking time to your preferred level of crispness.

5. Combine Rice and Bacon:

  • Add the cooked black rice and the previously cooked bacon to the sautéed vegetables in the skillet.

6. Add Butter, Season, and Serve:

  • For added flavor depth, you can add a small amount of butter to the stir fry. Stir to incorporate it into the dish.

  • Season the Starry Night Stir Fry with salt to taste. Remember that the bacon may already add some saltiness, so adjust accordingly.

  • Once everything is well combined and heated through, your Starry Night Stir Fry is ready to be enjoyed!
